summer fun and kale salad










  • we finally got some sunshine... just in time for fireworks.
  • i found my new favorite dish.... kale salad.... recipe to follow.
  • i finally started on my honey bun poufs (pattern pictured on the right) with 6 different colors of corduroy.
  • eislee has really taken to painting.... and i just love how she sings while she works.
ok... here is the recipe....

Kale Salad

ingredients:
1 bunch kale
1 teaspoon sea salt
1/3 cup dried currrants
1 diced apple
1/3 cup chopped walnuts
1/3 cup feta cheese
1/4 cup olive oil
2 tablespoons walnut oil
2 tablespoons unfiltered apple cider vinegar
5 tablespoons honey

wash and dry the kale leaves. peel the leaves from the stem. stack the leaves, roll up, and cut into thin ribbons. put the kale in a large bowl, add the salt, and massage with your hands for three minutes. the women that i adapted this recipe from explains that massaging the kale makes it less bitter and more digestible. you will feel the difference as it wilts in your hands. after the kale is massaged add currants, apple, walnuts, and feta. then make the dressing. in a small bowl add olive oil, walnut oil, honey, and apple cider vinegar and whisk until thoroughly mixed. pour dressing on salad and toss.

note:
when introducing this salad to kids i would call it apple salad with honey sauce. i was amazed with the change of interest once i changed the name.
i adapted this recipe from cynthia lair's massaged kale salad. i highly recommend her book "feeding the whole family". it is my current favorite.
